Aureole and the wine tower (Mandalay Bay)

The famous one. Aureole at Mandalay Bay has a four-story glass wine tower with thousands of bottles, and the wine angels who get hoisted up on harnesses to retrieve them. It is a spectacle, but the list behind it is the real deal.

This is a special-occasion move. Come for a serious bottle and the show of watching it get pulled from the tower. The by-the-glass program is strong too if you are not committing to a full bottle.

Bouchon and the French wine list (Venetian)

Thomas Keller's bistro at the Venetian is one of my favorite spots for a glass of French wine and a plate of something to go with it. The list leans Old World and the room feels like a proper Paris bistro.

It is as good for a wine-and-snack stop at the bar as it is for a full meal. Sit at the bar, order a glass and the gougeres, and you have a perfect low-key Vegas hour.

Casual self-pour and by-the-glass spots

If you want to taste widely without committing, look for the self-pour wine bars where you load a card and pour your own tastes from a wall of bottles. It is a fun, low-pressure way to find what you like.

These are great for groups with mixed tastes, since everyone pours what they want at their own pace. The off-Strip and downtown versions tend to be cheaper and less crowded than anything on the Strip.

Steakhouse bars with deep lists

Here is a sleeper move: the bar at a great Vegas steakhouse is one of the best wine bars in town. The big steak rooms keep deep, serious cellars, and you can post up at the bar for a few by-the-glass pours without buying a steak.

You get the same wine program and sommelier knowledge as the dining room, minus the full dinner commitment. It is my favorite way to drink great wine on the Strip without a reservation.

Lean on the somms and bartenders. The serious rooms have real wine knowledge behind the bar, so tell them your taste and budget and let them point you.

Use by-the-glass and steakhouse bars to drink above your usual level without buying a whole bottle. That is how you taste the good stuff without the big tab.
